Hello friends! I’m so excited to share my first recipe post with y’all!
When my dad was alive mum and I mostly cooked for him. He loved home made meals, but like so many we all worked more than full time and mum and I worked a 1 hour drive away from home. Which meant getting home after 6pm tired and hungry, so we were always trying to find something new and fast that didn’t taste boxed or plastic-y.
I learned that adding things like butter, fresh garlic, onions and spices to store bought shortcuts could elevate them to a much higher comfort food level by bringing in that homemade taste and adding some nutritional value as well. Here’s one of my favorites and it’s so quick and easy!

Lemon🍋 Alfredo Pasta Sauce With Scampi🍤
Ingredients list: 1 jar canned Alfredo sauce, 1/2 package of frozen shrimp🍤 scampi, 1/2 cup milk, juice of 1/2 lemon🍋 (about 1/4 cup), 1 bayleaf, fresh basil, salt and pepper to taste.
Making this while your pasta water boils takes about 5 mins to start and 5 mins to finish, with marrige time in between.
In a saucepan over med/low, let your scampi🍤 melt their butter coatings off. This generally happens really quickly. When the coating is all melted, but before the shrimp🍤 start to cook, take the shrimp🍤 out and set on a plate. You’ll add them in later, but you don’t want them to overcook, while the sauce is marrying.
Add your jar of alfredo sauce to your scampi butter. At this point theres still alot of alfredo goodness left on the sides of the jar, so just add your milk to the jar, put the lid on and shake a few times then add the milk/Alfredo to your sauce pan.
Shred about 1/4 cup of fresh basil into your sauce, add your bayleaf and lemon🍋 juice. Let simmer until it starts to bibble, not quite bubble, just little bibbles. Remove from heat and add your shrimp🍤 back into the sauce. Let the sauce rest about 10 mins. Your shrimp🍤 should come out just right not rubbery, but nicely cooked from the heat in the sauce.

Your pasta water is probably boiling and ready for the pasta to be added abut the same time you add your shrimp🍤 back in. I think, most spaghetti takes about 10 min to cook, so everything should be ready at about the same time. This should make about 4 or 5 servings. Wit mum and I we usually have 2 nights of dinners out of this.
We love to add some more fresh shredded basil, cracked red pepper and parmesean cheese to the tops of our pasta and sauce. This has become our favorite spaghetti dish! We use high fiber and high protein Dreamfields pasta. The lemon🍋 adds so much fresh yumminess to the sauce and it just hits every spot on your palate for that perfect bite!
Another quick tip: Instead of a salad, which takes a lot of prep work and adds extra calories from the dressing, mum and I enjoy sliced avocados or tomatoes instead. So easy, and still fresh and delicious!
